Fudgy Brownies

It's been cold here. Not like Michigan cold, but Alabama cold. This weekend we were supposed to be included in the historic record breaking snow and ice apocalypse....Which of course never happened where we live. Granted, I shouldn't be mad at that completely only because our state is not equipped for that kind of thing. I'm pretty sure we have one salt truck. It rarely snows here and when there is even a threat of snow the whole town shuts down. Schools closed, roads close, business close...everything closes. It's madness. The shelves are empty in the grocery store and people are lining the side of the road to get propane. It truly is a sight.


Back in December I made a video of several different food gifts to package or just to prep for when you were feeling less than motivated to make something. One of those things was brownie mix. I'm gonna tell you how to make it and if you want, you can click here to watch me make it.


This recipe will make two 8x8 pans or one 9x13 pan. It will take you longer to gather all your ingredients than it will be to mix it all together. This is also a one bowl dessert which makes my heart happy. Have I told you I hate doing dishes?? If not, then I hate doing dishes.


Dry Ingredients

  • All-purpose flour

  • Cocoa Powder - I like to mix regular and dark cocoa powder for the best combo but you don't have to do that

  • Granulated Sugar

  • Powdered Sugar - make sure to sift it

  • Salt - I love using kosher salt but you can use table or sea salt

  • Baking Powder

  • Chocolate Chips - I used semi-sweet but you can use dark or milk if you prefer.


Wet Ingredients

  • Butter

  • Oil - I used avocado but any oil will work such as coconut, veggie, canola, or olive oil

  • Eggs

  • Water

  • Vanilla


Recipe

1 1/2 cup all-purpose flour

1 cup cocoa powder

2 1/2 cup granulated sugar

1/2 cup powdered sugar

1 1/4 tsp salt

1 tsp baking powder

1 1/2 cup chocolate chips

1/4 cup melted butter

3/4 cup oil

4 eggs

2 TBS water

1 TBS vanilla extract


Instructions

  1. Preheat oven to 325 degrees Fahrenheit. Light spray two 8x8 baking dishes or one standard 9x13 baking dish or line with parchment paper and/or foil.

  2. In a medium bowl, combine the dry ingredients together (flour, cocoa powder, sugar, powdered sugar, baking powder, salt, and chocolate chips.) Whisk it all together.

  3. To your dry ingredients, add all your wet ingredients (eggs, butter, oil, water, and vanilla)...remember this is a one bowl dessert.

  4. Whisk everything together until you see no dry ingredients.

  5. Pour batter into your prepared pan and spread evenly.

  6. Bake for 40-45 minutes or until toothpick comes out clean...or if you like them a little more gooey, just take them out at the 40 minute mark.

  7. Cool completely before cutting.


Notes

If you want to add some mix-in's such as nuts, different flavored chocolate chips, then go for it! This is your recipe now! Just keep the same measurements as the chocolate chips and adjust to your liking. Example: 1 cup of dark chocolate chips and 1/2 cup pecans.
